  • Rice papers

  1. Soak the glutinous rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a cheesecloth-lined steamer over boiling water for 25-30 minutes until tender and translucent.
  3. Meanwhile, heat coconut milk, sugar, and salt in a saucepan until the sugar dissolves. Reserve a few tablespoons for drizzling later.
  4. Mix the cooked rice with the remaining coconut sauce and allow it to absorb flavors for 10-15 minutes.
  5. Peel and slice ripe mangoes thinly.
  6. Soften rice paper in warm water for 10-15 seconds; lay flat on a damp towel.
  7. Spread a thin layer of sticky rice on the softened rice paper, add mango slices, fold sides over, and roll tightly like a spring roll.
  8. Chill rolls seam side down for about 30 minutes before serving.
