  • 12 ounces whole wheat French bread (cut into small cubes)
  • 3 ounces diced turkey strips
  • 1 tablespoon unsalted butter
  • 3 shallots (minced)
  • 3 large stalks celery (minced)
  • 2/3 cup chopped parsley
  • 10 fresh sage leaves (minced)
  • 3/4 teaspoon Bell’s Seasoning
  • 1/4 teaspoon salt
  • 1 large egg (beaten)
  • 1 3/4 cups chicken broth
  • olive oil spray

Instructions

  1. Let bread sit overnight to harden. If your bread is fresh, preheat the oven to 250°F. Bake the bread cubes on 2 baking sheets for about 30 minutes, stirring halfway until completely firm.
  2. Increase the oven temperature to 375°F. Spray a non-stick muffin tin with olive oil spray.
  3. Heat a large nonstick skillet over medium heat. Cook the turkey strips until browned, about 2 to 3 minutes.
  4. Add butter; when melted, add shallots, celery, parsley, sage, Bell’s seasoning, and salt. Cook on medium-low until softened, about 8 to 10 minutes.
  5. Remove from heat and let cool for a few minutes. In a medium bowl, combine chicken broth and beaten egg. In a large bowl, add bread cubes and combine with sautéed vegetables.
  6. Add the chicken broth and egg mixture to the bread mixture and mix well until combined. If too dry, add more broth or water until desired consistency is reached. Let it sit for 10 minutes.
  7. Transfer stuffing mixture into the muffin pan. If making ahead of time, cover with foil and refrigerate.
  8. Bake uncovered for about 25 minutes or until golden brown.
