  • 2 lbs beef chuck, cut into cubes
  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 (14 oz) can full-fat coconut milk
  • 1 (14 oz) can crushed tomatoes
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping the onion, mincing garlic, grating ginger, and cutting beef into bite-sized cubes.
  2. In a large skillet over medium heat, heat coconut oil and sauté the onion until translucent. Add garlic and ginger; cook for another 2 minutes.
  3. Transfer the sautéed mixture to your slow cooker and add beef cubes, spices (curry powder, cumin), coconut milk, crushed tomatoes, salt, and pepper.
  4. Set your slow cooker on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  5. Serve over rice or with naan bread.
