  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider or 1 tsp lemon juice
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, cream the softened butter with an electric mixer on medium-high speed. Add the sugars and mix until well combined with the butter. Add vanilla extract and eggs; mix until just combined. Gradually incorporate the dry ingredients until a dough forms. Chill for 30 minutes.
  2. Rinse & peel your apples before dicing them into bite-sized chunks. Combine all filling ingredients in a medium pan over medium-high heat. Cook for about 15 to 18 minutes while stirring occasionally. Taste around 15 minutes; continue cooking until desired tenderness is achieved. Transfer cooled apple mixture to a bowl.
  3. Prepare your Salted Caramel Sauce according to your easy recipe. Let cool at room temperature until thickened, about 20 minutes.
  4. Use a large cookie scoop to portion out dough balls of approximately 65 grams each. Place them in an airtight container. Chill in the fridge for at least four hours or freeze for two hours.
  5. Preheat your oven to 350°F. Melt butter in a medium mixing bowl; stir in remaining crumble ingredients until crumbly. Spread on parchment-lined pan; bake for 12-14 minutes until golden brown.
  6. Preheat your oven again to 365°F. Line cookie sheets with parchment or silicone mats. In a small bowl, combine sugar and spices; roll chilled dough balls in this mixture before placing them on sheets with enough space between them.
  7. Once baked cookies have cooled slightly, create an indent in each center using a tablespoon’s back. Spoon warm apple filling into each cookie center, sprinkle crumble topping over it, then drizzle with salted caramel sauce.
  8. Enjoy immediately after assembling! Store leftovers in an airtight container in the fridge for up to five days.
