  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tbsp all-purpose flour, optional (for thickening)
  • Crusty bread bowls

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add seasoned beef cubes and sear until browned on all sides (about 5-7 minutes). Remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery for about 5 minutes until softened.
  3. Return seared beef to the pot along with tomato paste, broth, thyme, rosemary, and bay leaves. Stir well.
  4. Bring to a boil then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.
  5. If desired, thicken the stew by mixing flour with water and stirring into the pot during the last few minutes of cooking.
  6. Hollow out crusty bread bowls and ladle stew inside for serving.
