  • 1 whole chicken (about 45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, minced garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper to create a marinade.
  3. Generously coat the whole chicken with the marinade, ensuring to get under the skin. Let it marinate for at least 15 minutes.
  4. Place quartered onion in a roasting pan and set the marinated chicken on top. Pour chicken broth around it.
  5. Roast in the oven for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C), basting occasionally.
  6. Remove from oven and let rest for 10 minutes before carving.
