  • 8 slices of sourdough bread
  • 1 pound thinly sliced roast beef
  • 8 slices sharp cheddar cheese
  • 4 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh arugula or spinach (optional for garnish)

Instructions

  1. Preheat a large non-stick skillet over medium heat.
  2. Spread 1 tablespoon of butter on one side of each slice of bread.
  3. Place one slice of bread butter-side down in the skillet. Spread Dijon mustard if desired. Layer with roast beef and two slices of cheddar cheese. Top with another slice of bread, butter-side up.
  4. Cook for 3-5 minutes until the bottom is golden brown and cheese starts melting.
  5. Flip the sandwich carefully using a spatula; cook the other side for another 3-5 minutes until both sides are crispy and cheese is melted.
  6. Remove from skillet and let cool slightly before cutting in half or quarters.
