  • 6 tbsp unsalted butter (melted)
  • 4 (8 oz) packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup fresh or frozen blueberries
  • 2 tbsp granulated sugar for blueberry swirl
  • 1 tbsp lemon juice
  • Edible silver dust for decoration

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of the pan and bake for 8-10 minutes; cool.
  3. Beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, then mix in eggs one at a time.
  4. In a saucepan, cook blueberries with sugar and lemon juice until soft. Stir in cornstarch slurry; simmer until thickened. Cool slightly.
  5. Pour cheesecake batter over crust, dollop blueberry mixture on top, and swirl gently with a skewer.
  6. Bake for 50-60 minutes until slightly jiggly; cool in oven for one hour before chilling in the fridge for at least four hours.
