  • 1 box (3.4 oz) instant pistachio pudding
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tablespoons water
  • 1 cup sour cream
  • 3/4 cup maraschino cherries (halved)
  • 2 cups powdered sugar (for glaze)
  • 22.5 tablespoons milk (for glaze)
  • 1 teaspoon almond extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two small loaf pans.
  2. In a large mixing bowl, combine yellow cake mix and pistachio pudding mix.
  3. Add eggs, vegetable oil, water, and sour cream; beat until smooth.
  4. Fold in halved maraschino cherries.
  5. Pour the batter evenly into prepared loaf pans and bake for 35–40 minutes or until a toothpick comes out clean.
  6. Allow cooling on a wire rack before glazing.
  7. For the glaze, whisk powdered sugar, milk, and almond extract until smooth. Drizzle over cooled loaves.
