  • 1 bunch scallions
  • 1/3 cup plus 3 tablespoons olive oil
  • 10 ounces feta cheese
  • 4 ounces cream cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon hot water

Instructions

  1. Preheat your broiler and line a baking sheet with foil.
  2. Juice one lemon and slice the remaining half into rounds. Toss scallions, lemon slices, and olive oil on the baking sheet.
  3. Broil for 7-9 minutes until charred. Allow to cool.
  4. In a food processor, blend feta, cream cheese, remaining olive oil, lemon juice, black pepper, cayenne, and hot water until smooth.
  5. Add most charred scallions (reserve some for garnish) and pulse to combine.
  6. Serve in a bowl garnished with reserved scallions and lemon slices.
