- 1 teaspoon kosher salt
- 2 cups vegetable oil
- 4 tablespoons freshly squeezed lemon juice
- 4 tablespoons ice water
- In a food processor, blend garlic cloves and kosher salt until smooth.
- With the processor running, slowly drizzle in vegetable oil starting with a few drops at a time for proper emulsification.
- Once half the oil is incorporated, alternate adding lemon juice and the remaining oil gradually while blending for about 20 minutes.
- Add ice water and blend until smooth.
- Transfer to a bowl, garnish with olive oil if desired, and refrigerate overnight for optimal flavor.
