  • ¾ cup peeled garlic cloves
  • 1 teaspoon kosher salt
  • 2 cups vegetable oil
  • 4 tablespoons freshly squeezed lemon juice
  • 4 tablespoons ice water

Instructions

  1. In a food processor, blend garlic cloves and kosher salt until smooth.
  2. With the processor running, slowly drizzle in vegetable oil starting with a few drops at a time for proper emulsification.
  3. Once half the oil is incorporated, alternate adding lemon juice and the remaining oil gradually while blending for about 20 minutes.
  4. Add ice water and blend until smooth.
  5. Transfer to a bowl, garnish with olive oil if desired, and refrigerate overnight for optimal flavor.
