  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1 rind of parmesan cheese (optional)
  • 1/4 cup fresh grated or shaved parmesan cheese (optional)

Instructions

  1. In a mixing bowl, combine ground beef, bread crumbs, grated parmesan cheese, egg, minced onion, minced garlic, parsley, basil, crushed red pepper flakes, salt, and black pepper. Mix until well combined. Shape into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Add the meatballs in batches; brown them on all sides. Remove from pot and set aside.
  3. In the same pot, add diced onion and carrots. Sauté until they soften—about 5 minutes. Then add diced tomatoes and minced garlic; cook for another 3 minutes.
  4. Pour in water and beef stock; stir in tomato paste. Season with salt and red pepper flakes. Bring to a boil.
  5. Once boiling, reduce heat to low. Return meatballs to the pot along with dried parsley, basil, and oregano. Let simmer for about 20 minutes.
  6. Stir in gnocchi during the last 5 minutes of cooking time until they are tender.
  7. Ladle soup into bowls and top with grated or shaved parmesan cheese if desired. Enjoy your hearty bowl of Italian comfort!
