  • 1 cup orzo pasta
  • 28 oz canned whole peeled tomatoes, crushed
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup dry red apple vinegar
  • 4 cups beef broth
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef pieces until golden brown on all sides.
  2. Add chopped onions and minced garlic; sauté until onions are translucent.
  3. Stir in crushed tomatoes and dry red apple vinegar, scraping browned bits from the pot.
  4. Pour in beef broth, add oregano and bay leaf, then bring to a simmer. Cover and cook on low for about 90 minutes until beef is fork-tender.
  5. In the last 10 minutes, stir in orzo pasta and cook until al dente.
