  • 1 cup hummus
  • 1 cup chickpeas (cooked)
  • ½ teaspoon cumin
  • 2 pita breads
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ⅔ cup unsweetened non-dairy yogurt
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 small clove garlic
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 2 twists black pepper
  • 4 to 6 tablespoons water
  • 2 tablespoons pine nuts (toasted)
  • 4 tablespoons pomegranate seeds
  • 1 handful mint leaves (chopped)
  • 1 handful flat-leaf parsley (chopped)
  • 1 pinch sumac (or paprika)

Instructions

  1. Prepare the Chickpeas: Drain and rinse 1 cup of cooked chickpeas. Boil in water with ½ teaspoon cumin for about 15 minutes. Drain and set aside.
  2. Make Pita Chips: Cut 2 pita breads into triangles. Toss with 2 tablespoons olive oil and ½ teaspoon salt on a baking tray. Bake at 350°F (180°C) for 5 to 10 minutes until golden brown.
  3. Prepare Yogurt Sauce: In a bowl, mix ⅔ cup yogurt, 3 tablespoons tahini, 2 tablespoons lemon juice, grated garlic, cumin, salt, black pepper, and enough water for desired consistency.
  4. Assemble Fatteh: Spread hummus on a platter, layer with chickpeas and pita chips, drizzle with yogurt sauce, and garnish with toasted pine nuts, pomegranate seeds, mint, parsley, and olive oil.
