  • 67 medium Yukon Gold potatoes, thinly sliced into 1/8th inch rounds (about 3 pounds)
  • ½ white or yellow onion, cut into slices
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour (or gluten-free flour)
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or extra cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Layer sliced potatoes and onions in the baking dish.
  3. In a saucepan over medium heat, melt butter and whisk in flour. Gradually add almond milk while whisking until smooth.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper until melted and creamy.
  5. Pour cheese sauce over potatoes and cover with foil; bake for 45 minutes.
  6. Remove foil, top with gruyere and parmesan, then bake uncovered for another 30-45 minutes until golden brown and tender.
