  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons flour (or chickpea flour for gluten-free)

  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 2 tablespoons plain yogurt
  • 23 tablespoons water

Instructions

  1. Cook red lentils in boiling water for 10–12 minutes until soft. Drain and let cool.
  2. In a mixing bowl, combine cooked lentils with grated sweet potato, chopped onion, minced garlic, spices, salt, pepper, cilantro, and flour. Mix until well combined and let sit for 5–10 minutes.
  3. Heat olive oil in a skillet over medium heat. Form the mixture into patties and cook each side for 3–4 minutes until golden brown.
  4. For the avocado sauce, blend avocado, cilantro, garlic, lime juice, yogurt, and water until smooth.
