Ingredients

Scale
  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus 2 extra for naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup plain yogurt, room temperature

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and grated ginger; cook until fragrant.
  2. Brown beef stew meat in the pot, about 8–10 minutes.
  3. Stir in curry powder, ground cumin, and optional chili flakes, ensuring meat is well-coated.
  4. Add chickpeas, coconut milk, beef broth, tomato paste, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low; cover and simmer for at least 45 minutes, stirring occasionally.
  6. While the curry cooks, prepare garlic naan by mixing flour, salt, baking powder, and yogurt into a smooth dough.
  7. Roll dough into flat circles; cook in a skillet over medium-high heat until golden brown on both sides.
  8. Serve the curry garnished with fresh cilantro alongside warm garlic naan.
