  • ½ cup brown sugar
  • ¼ cup rice vinegar
  • ¼ cup hoisin sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon chili paste (optional)
  • Chopped green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Rinse the beef short ribs under cold water and pat dry.
  2. In a large bowl, whisk together soy sauce, brown sugar, rice vinegar, hoisin sauce, ginger, garlic, sesame oil, chili paste (if using), and black pepper.
  3. Marinate the short ribs in a resealable bag or bowl for at least 2 hours (overnight recommended).
  4. Preheat your oven to 325°F (160°C).
  5. Sear marinated ribs in a skillet over medium-high heat until browned on all sides.
  6. Transfer to a roasting pan and pour remaining marinade over the beef. Cover with aluminum foil.
  7. Roast for about 3-4 hours until fork-tender; remove foil in the last 30 minutes to caramelize.
  8. Let rest for 10-15 minutes before slicing and garnishing with green onions and sesame seeds.
