  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • Salt and black pepper to taste

Instructions

  1. Boil salted water in a large pot and cook rotini until al dente (9-10 minutes). Reserve ½ cup pasta water before draining.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper.
  3. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken until golden brown (7-8 minutes) and stir in half of the garlic during the last minute. Remove from skillet.
  4. Lower heat to medium; add remaining butter and garlic to the skillet, sautéing until fragrant.
  5. Pour in heavy cream, simmering for 2-3 minutes until thickened.
  6. Stir in mozzarella and Parmesan cheeses until melted into a smooth sauce.
  7. Season sauce with Italian seasoning, crushed red pepper flakes (optional), salt, and pepper.
  8. Add cooked rotini to the skillet, tossing until well-coated with sauce. If needed, use reserved pasta water to adjust consistency.
  9. Serve hot garnished with fresh parsley.
