  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Large Egg
  • 1/4 cup Heavy Cream
  • 1 tsp Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Semi-sweet Chocolate Chips
  • 1 cup Kataifi (Shredded Phyllo Dough)
  • 1/2 cup Pistachio Cream/Butter
  • Chopped Pistachios (Optional) (for garnishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a saucepan, melt the salted butter over medium heat until golden brown. Allow it to cool slightly.
  3. In a mixing bowl, combine the brown sugar, granulated sugar, and cooled brown butter; mix well.
  4. Add the egg, heavy cream, and vanilla extract to the sugar mixture; stir until smooth.
  5. In another bowl, whisk together flour, baking soda, baking powder, and salt; gradually add this dry mixture to the wet ingredients until just combined.
  6. Fold in semi-sweet chocolate chips gently into the dough.
  7. Press half of the cookie dough into the bottom of your prepared baking pan.
  8. Toast kataifi in a separate pan with a bit of butter until golden brown; mix with pistachio cream and spread over the cookie base layer.
  9. Spread remaining dough evenly over the kataifi filling.
  10. Bake for 25-30 minutes or until golden brown; let cool completely before slicing.
