  • ¼ cup granulated sugar (optional)
  • 6 tbsp unsalted butter, melted
  • 2 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs and optional sugar with melted butter; press into the bottom of a springform pan. Bake for 8–10 minutes until golden brown. Cool completely.
  3. Beat softened cream cheese until smooth; gradually add sugar and mix well. Add eggs one at a time until fully incorporated. Stir in sour cream, vanilla extract, and mashed bananas until blended.
  4. Pour filling over cooled crust; place the pan in a larger baking dish filled with hot water (water bath). Bake for 60–70 minutes until edges are set but center jiggles slightly.
  5. Turn off the oven and let the cheesecake cool inside for an hour before transferring it to the fridge. Chill for at least 4 hours or overnight.
  6. Remove from springform pan; top with fresh banana slices and whipped cream before serving.
