Ingredients

Scale
  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 220 g cold unsalted butter (cubed)
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other finely ground nuts or breadcrumbs)
  • 1 egg
  • 1 tbsp water
  • Vanilla ice cream (or your favorite flavor)

Instructions

  1. Prepare the Pie Crust: Mix flour, sugar, and salt in a bowl. Add cold butter and mix until crumbly. Gradually add water until dough forms; chill for 30 minutes.
  2. Make the Apple Filling: Peel and slice apples thinly. Melt butter in a skillet over medium heat; add apples, brown sugar, cinnamon, cornstarch, salt, and water. Cook until apples soften slightly.
  3. Assemble the Pie: Preheat oven to 180°C (350°F). Roll out half of the chilled dough; fit into a pie dish. Fill with apple mixture and top with rolled dough; cut slits for steam to escape.
  4. Bake the Pie: Brush top crust with egg wash; sprinkle almond flour and brown sugar over it. Bake for 45-50 minutes until golden brown.
  5. Serve with Ice Cream: Allow pie to cool slightly before slicing and serving warm with scoops of vanilla ice cream.
