  • 1 egg
  • 2 medium-small apples, peeled and chopped finely
  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Prepare a cupcake pan with paper liners.
  3. In a bowl, mix graham cracker crumbs with sugar and cinnamon, then combine with melted butter.
  4. Press the mixture into each cupcake liner and refrigerate to set.
  5. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and nutmeg; add melted butter until crumbly.
  6. Beat cream cheese and sugar in a bowl until smooth; add vanilla, flour, and egg until combined.
  7. Spoon cheesecake filling over crusts; top with a mixture of chopped apples mixed with lemon juice, brown sugar, cornstarch, cinnamon, and nutmeg.
  8. Sprinkle streusel on top and bake for 28–30 minutes or until edges are set.
  9. Cool for 30 minutes before refrigerating.
